Fruit Cake Ummi

230gm butter
230gm light brown sugar
230gm plain flour
60gm self raising flour
4 eggs
1 tablespoon jam strawberry
1 teaspoon vanilla
3/4 cup sunquick orange
pinch salt
450gm dried mixed fruit

Soak mixed fruit in sunquick overnight. Sift flours and salt. Cream butter and sugar until light and fluffy.  Beat in one egg at a time. Alternately add flour and fruit until both are used. Place in 20cm round tin and bake 160 degree for 1 hour.
